Put the dough ingredients into the kneading cylinder. I am used to putting the dry ingredients first and then the wet ingredients. Some teachers do the opposite to me, but that doesn’t matter. Divide the kneaded dough into 16 parts on average. Knead each part again and then roll it into a round shape. Place it on a baking sheet for fermentation. You can use it in the oven, at room temperature, or in a fermentation box. You can choose the one you have. Tools for fermentation, of course the fermentation box is the best, and the bread produced is the softest. -

During the fermentation time, make a bowl of diluted egg liquid, which means mixing eggs and water in a ratio of 1:1. -

The volume of the fermented buns has approximately doubled. Each bun is placed next to each other and looks like they are in love with each other.
