Pour the milk into the bowl. -

Do not use other egg yolks. Pour the egg whites into the milk. -

Use a colander to strain the bubbles and they will taste smoother. -

In the pot, cover the bowl with plastic wrap and prick a few holes. -

Steam over high heat for 15 minutes, then turn off the heat and simmer for 5 minutes. -
